Controlling Blood Sugar with Diet

March 18, 2008
After weeks of increased fatigue and various joint and muscle aches I measured my glucose level at 393, two hours after a large (buffet) meal.

March 21, 2008 Fasting blood sugar was 179 (90 – 130) and A1C was 8.8 (below 6 is target).
June 20, 2008 A1C measured 5.3 and fasting blood sugar was 111.
September 20, 2008 A1C measured 5.6  
December 22, 2008 A1C measured 5.1 and blood sugar was 104, Praise The Lord!
March 20, 2009 A1C measured 5.3 and glucose (non-fasting) was 111
June 15, 2009 A1C measured 5.4 and glucose (non-fasting) was 115
September 22, 2009 A1C measured 5.7 and glucose (fasting) was 93
December 22, 2009 A1C measured 6.0 and glucose (non-fasting) 136
March 23, 2010 A1C measured 6.2 and glucose (non-fasting) 143
June 21, 2010 A1C measured 6.1 and glucose (non-fasting) 140
September 23, 2010 A1C measured 6.0 and glucose (non-fasting) 136
December 20, 2010, A1C measured 5.9

Weight loss has been 30 – 41 lbs. Unexplained weight loss was one of my symptoms, prior to March 18, 2008.  The greatest obstacle has been carbohydrates in No Sugar Added products.
DIET
I believe eating small quantities every two hours has been key to affecting these results.
AND NOTHING IN BETWEEN
Breakfast:
Cheerios (regular, not Honey Nut) 2cups with skim milk
Occasionally with banana or fresh blueberries
Snack:
Cup of Coffee with single serving of Sugar Free cookies.
Lunch:
Hi-Protein meat and tablespoon of vegetables i.e....green beans, lima beans, black eye peas
Sugar free pudding/cool whip desert with single serving of sugar free cookies
Snack: ½ cup serving
Chilled apple with tablespoon of Peanut Butter i.e...Don't Eat Carbs Naked
Use a fat or a protein along with a carbohydrate to slow digestion
Supper:
Same as Lunch but time is critical. DO NOT EAT TOO LATE!
One night a week I substitute a small crisp (corn tortilla) taco with a diet soft drink in order to eat before church instead of too late, after choir practice.
Snack:
½ Peanut Butter and Banana Sandwich (100% Whole Wheat)
Other snacks include, Lance Whole Wheat  Cheese Crackers with a cup of Coffee as well as various other Whole Wheat Low Sugar products.
One of my favorite meat dishes has been a Low-Sugar Chopped Barbecue served on a Whole Wheat Kaiser roll.
I have made Whole Wheat Waffles with liquid egg whites and skim milk and topped them with sugar free syrup.
Dining Out
Order as healthy as possible i.e..whole wheat, green leafy vegetables, sweet potato, etc.... Ask for a To-Go box when you order. Place half of the entree in the box and save it for at least 2 hours, later.

PORTION CONTROL IS MOST CRITICAL AND THE BIGGEST CHALLENGE.

It has only been through God's strength I have been able to remain consistent.
